How To Make Pesto Sauce

Step 1:

You will need

  • 50 g pine nuts
  • 50 g pecorino cheese
  • 100 ml extra virgin olive oil
  • 1 garlic clove
  • handful fresh basil
  • 1 cheese grater
  • 1 pestle and mortar


Step 2:

Crush

Tear the basil leaves off the stems and place into the mortar. Crush them with the pestle. Add 50 grams, which is about a handful of pine nuts, and grind. Crush the garlic with the knife blade, chop off each end and peel. Add to the mortar and continue crushing. Keep going until the mixture is reduced to a paste.


Step 3:

Mix

Grate 50 grams of pecorino cheese, and add to the mortar. While you are stirring, gradually pour in the extra virgin olive oil. Have a taste, and add a touch of salt and pepper if you think it needs it.


Step 4:

Serve

Stir through some freshly cooked pasta, and garnish with some grated pecorino cheese.

    Ho fame da lupo? Hungry like the wolf? Ho = I have, Fame = hunger, Da = the / of (di?), and lupo is wolf? Would love to learn this from an italian grandma, who learnt it from hers etc.

    every time i try it always comes out horribly grassy. Like ive taken a mouthful of lawn clippings. Thng is, i luuuurve pesto.

    the neat thing with pesto is that you can use variations on the nuts, herb, oil and cheese. I reckon the only mandatory one is garlic. I think walnuts or brasil nuts could be interesting. I've also used watercress rather than basil. just don't be surprised if offend any passing italians!

    can i use parmigiano reggiano cheese instead of pecorino in pesto sauce?

    Pecorino cheese is traditionally made with lamb or calfs rennet.

    this also works with watercress an almonds instead of pine nuts n basil Phil of Whittlesey Peterborough England

    I only give it a good because I prefer the flavor that comes from pan toasting the pine nuts before adding them to the basil. 1 tsp of oil and throw nuts in my wok. Lately, if it is just for me, I have been using the mini chopper to blend every thing. Only because I am lazy that I do it this way, it does give it more of a production not home made taste tho. For guests I get out the mortar and pestle.
